Dal Molise brings the rich tradition of Italian cheesemaking to the UAE and GCC with its range of premium frozen cheeses.

Founded in 2000 by Mr. Domenico Notartomaso, the Consorzio Dal Molise was born from his deep passion for Italian cuisine and profound love for his native land—the Molise region, situated between Apulia and Abruzzo, renowned for its dairy specialties.

Recognizing that extended shelf life would be crucial in sharing his passion with a broader audience, Mr. Notartomaso, after years of research and in collaboration with the University of Molise, achieved the remarkable feat of preserving Burrata, Stracciatella, and Mozzarella for 18 months without alteration, maintaining all the organoleptic and nutritional qualities of ultra-fresh cheese.

This accomplishment is made possible through the use of IQF (Individually Quick Frozen) technology with liquid nitrogen—a true innovation rooted in tradition. The strength of this process lies in the diversification of freezing lines tailored to the needs of each producer and product type, ensuring superior, consistent quality and aligning with the necessary approach to avoid waste.

Dal Molise’s frozen mozzarella range delivers premium meltability, portion control, and consistency, making it the go-to choice for chefs looking for quality without compromise.

Ideal for Pinsa

Our 0.8-gram sticks! Thanks to their small size and weight of only 0.8 grams, our Fiordilatte mozzarella sticks can be used immediately without defrosting. They melt quickly during cooking and are perfectly suited for Pinsa Romana. After baking, the mozzarella becomes stringy, retains its white color, and does not release water, preserving the characteristic crispiness of the Originale Pinsa Romana.

We offer a range of Mozzarella in various formats, available in cow's milk, DOP buffalo milk, and even smoked versions. For example, we have Pearls ranging from 1 to 10 grams, Ciliegie or Bocconcini, the famous Treccia, and the classic Balls from 100 to 200 grams.     Our Burrata from Molise

    Available in natural, truffled, and even smoked versions, our Burrata brings freshness and creaminess to your antipasti, salads, pasta dishes, and, of course, as a topping on Pinsa Romana (or Pizza).

    Our Burratina comes in 50g, 100g, and 125g sizes, while our Burrata is available in 200g or 250g. They defrost in 12 hours in the refrigerator at +4°C and can be kept refrigerated for up to 10 days after defrosting.

    Our Stracciatella Range

    Prefer just the creamy heart—Stracciatella? We offer it in 200g, 1kg, and 1.5kg versions for foodservice professionals.

    Our Stracciatella comes in various recipes: Natural, Pesto, Truffle, Nduja, and Cacio e Pepe. It's an ideal product for aperitivo, as a base to add on Pinsa after baking, or even in a sandwich.

Our Blue Cheese

Available in two varieties with an unmistakable taste:

  • Mild Version: With a tender consistency and a slightly spicy flavor.

  • Spicy Version: More consistent and slightly crumbly, with a more pronounced taste.

Adding a touch of originality, blue cheese can be used in numerous dishes: an ideal ingredient for risottos, ravioli, an excellent seasoning for all kinds of meats, and especially perfect as a topping for Pinsa (or pizza).

Our Stracchino

Our Mascarpone

Mascarpone is a creamy dairy product composed of 70% cream and 30% milk; it is obtained by processing cream.

  • Available in 500g and 10kg packages.

  • Primarily known as an essential ingredient in Italian tiramisu, it is also used in other desserts, cakes, cake fillings, mousses, quiches, tarts, and is excellent as a condiment for pasta.

Creams in Pouches

A new range of Italian creams in 500g pouches (doypack) is available, with four different recipes: Gorgonzola, Parmigiano Reggiano, Taleggio, and Pecorino.

These pouches are ideal for garnishing your Pinsa/Pizza, pasta dishes, or risottos!
